About our Knives

We are a small, family-run shop located in Las Cruces, NM. All of our knives are made through the process of stock removal unless otherwise stated. We heat treat all of our knives here. None of our process is automated. There are small imperfections in all our knives that reflect the hand-made nature of the products. 

 

Our Materials:

All our steels come from Jantz, Pops, New Jersey Steel Baron, or USA Knifemaker. 

Many of our handle materials come from those same suppliers, with the addition of various local/online sources for natural materials (wood, etc). The steel and handle materials will vary from knife to knife, please look at the listing for specifics.  With heat-treating/hardness we usually try to go with what makes the most sense for the intended application of the knife. 

 

Care:

The knives will need to be sharpened eventually. There are many affordable sharpening systems you can use if you’re interested in being able to keep your own knives extremely sharp.  If not, there are professional knife sharpeners and friendly knife nuts all over the place. Just don’t use a “pull-through” sharpener, whatever you do. The knives will last and keep much better if you follow these few guidelines: Do not run them through the dishwasher. Clean them and dry them after each use. Try not to leave them wet. Some steels are more stainless than others. Some handle materials are more robust than others. No dishwasher and storing them clean and dry will go a long way.
